Let's Be Honest about Recipes
I rarely use recipes. I see one and plan to use it, I think I am going to, I save it, and sometimes I even buy the ingredients. But in the end, I find I rarely use it. I don’t think I am alone, so I am only going to provide an occasional recipe that I actually find myself using. Please send me any healthy recipes that you currently use.
Beets- Three easy healthy ways to eat them
I found I could not find pickled beets that did not have significant added sugar. My son showed me how he eats beets and I was sold. My daughter takes it a step further, and then I pushed it out one more bit.

Sliced beets- Peel the beet and then cut it to the thickness you like best. Store in a plastic bag in the fridge. They are good with humus, avocado or just plain and keep well.

Roasted beets- Cut up the peeled beet into cubes, mix with olive oil and seasoning to taste (pepper, garlic, salt). Bake in the oven at 400 for 12-15 minutes to taste.

Beet chips- Use a vegtable peeler to peel thin slices off the peeled beet. Cook as roasted beets.
